When I create a post grid, the title under the featured image, as well as the text below the title render in a single line, which gets cut off at the right margin. I would like the title and the text below it to not be cut off, but instead render on multiple lines packed underneath the featured image. I can't seem to locate the setting that would allow me to do this.

You should learn more about block editor, there is obvious difference use of shortcode and code block, don't worry, just put the shortcode insider shortcode block, hope your grid will look normal.

To display shortcode you must have to use shortcode block, code block only uses to display plain code.

To fix the blurry issue go to following settings

Layout Settings > Featured image size

I'm really new to WordPress, so I wasn't able to make sense of your diagnosis. I don't know what the difference between using code block for displaying shortcode, and shortcode block is. Also, your second screenshot depicts an interface that I can't locate in the Post Grid menu of options.

The link you shared regarding the blurry featured images appears to be a dead link.
