Hi. I can't get the plugin to show posts from just one category. I have set it to just one but it is shows posts from all.

Welcome to our forum.
have you watch this video to set categories. you can add category element from layout editor to see the post categories. if you are using any cache plugin please try to deactivate and see if anything changes.
Also can you please tell me which version are you using?
