Hello,  I can't figure out how to put text in the subject header so that the viewer can read what is in the accordion (ie. to help them choose if they want to open it)

It's not clear what you're trying to achieve. Please elaborate more. However, you can add Accordion header title and body content by following this screenshot - https://ibb.co/fp0QvMm
