I have added the slider to my homepage and it just shows as a really thin line and says no products to show
how do I add the products?

You probably talking about Woocommerce Products Slider this plugin only work with Woocommerce , please check you have already installed and create your first product.

I changed the Catalog visibility from Shop to Shop and search results, this made no difference, apart from the box is now massive and taking up half of my home page – but still no products are being shown

Please check "Query Product" tab option try different options.
Hide out of stock items > No Check
Featured Product display > No check
Catalog visibility > Shop and search results
