I am using the new layouts to manage my grids but I wonder whether the new layouts allow for a content to be added to the thumbnail as was wit the old 'ContentBottom layout' as in pic:https://i.imgur.com/BJsARLX.png

Have you tried new layout editor?

Please check overview video we have added new layout editor in latest version of post grid, hope you can do this easily if you know CSS,
