I create a new layout with a meta key (ACF) type date and the format displayed is YYYYMMDD instead I need to have a format like dd/mm/yyyy.
On which function should I work and where is it located?

Welcome to our forum.
I would recommend you create a shortcode for the output of meat field, and you can use this shortcode under layout editor "HTML" element
