I am experimenting with Post Grid and was wondering if it is possible to add post voting in either the basic or Pro version? Does either version have this built in or is it something that I could add with another plugin and short code?

Unfortunately, post voting feature isn't available right now with post grid plugin, but you can use 3rd party plugin shortcode to display with post grid via layout editor. there are a ton of voting plugin available in wordpress.org repository https://wordpress.org/plugins/search/vote/
I am not sure if you already watch this video where we have shown you can display "Yet Another Stars Rating" the same way you can use HTML element to display 3rd party plugin shortcodes
