Hi,
Welcome to PickPlugins.
First, make sure you've uploaded a logo. To upload a logo, go to Email Templates => Email logo.

Then under the Email body, Switch to the Text tab and write HTML img tag. You can use {site_logo_url} to generate the logo src URL.
