Currently, I am using the postgrid for a staff directory. It is pulling staff member name and role. I would like it to pull name and title...I can't figure out how to edit this in the back end.

i am not sure if you checked the layout editor, you can add or remove any elements via layout editors, Please check this video

If you want to display custom meta field you will need to buy pro version to display meta field value on the grid. i can see you have created custom field by ACF, we have full support for ACF plugin in pro version
