Hello,
I want to build a grid for archive pages and I've read this dokumentation.
But how is to set the post types and taxonomies for that in the post grid settings that show the content for different categories or tags?

Welcome to our forum.
you will need to choose only post types, taxonomy will automatically add from current archive page, just follow the documentation and see what's happening.
