I'd like to be able to click on any image in the grid and define a custom link--- so it would go somewhere else, rather than back to the post. is that possible?

Yes, you can do this, just go to edit post and see there is an option Custom link to this post

Under post grid settings, see there is an option "Featured image linked to post"

So it will be linked to custom url.
